ORIGIN STORY

Though the term “Kölsch” wasn’t used until 1906, the beer originated in the late 1800s, (with bureaucratic roots as far back as the 1600s) in Cologne (Köln), Germany. Like Champagne, Kölsch isn’t truly Kölsch unless it meets the standards of the Kölsch Konvention (1986), which defines the beer as “light, highly attenuated, hop-accentuated, clear top-fermenting Vollbier” and restricts production to 24 breweries in the region.

SO, HOW IS KÖLSCH TRADITIONALLY SERVED? 

Traditionally served in small cylindrical glasses called Stange, Kölsch is best enjoyed quickly! In Cologne, waiters known as Köbes carry multiple fresh rounds on trays called kranz, replacing your glass immediately without asking if you want another one. This essentially makes your glass bottomless! And also keeps your beer fresh, cold and at peak carbonation. When you’re ready to tap out, put your coaster on top of your glass to signal you’re ready for the bill.
